Italian Breakfast Hash
DIRECTIONS:
Preheat oven to 450 degrees.
Cut potatoes into 3/4 inch pieces and toss in oil.
Add steak spice, salt, and pepper, and toss again.
Place potatoes in oven for 40 minutes or until soft.
Dice white onions, sausages, and tomatoes.
Melt half the butter in a skillet and add the sausage, stirring on medium-high heat.
Add onions and stir until transparent.
Add tomatoes and turn off the heat.
In a seperate bowl crack eggs and whisk. Salt and pepper to taste.
Turn skillet on with medium heat and add the egg mixture and spinach, stirring regularly till eggs are fluffy.
Serve contents of the skillet over potatoes and top with feta.

8 Sabatino’s Paleo Organic Basil & Cracked Black Pepper Chicken Sausages
1/2 cup Canola Oil
1/3 cup Steak Spice
2 White Onions
2 Tomatoes
12 Large Eggs
1/2 cup Butter
3 cups Fresh Spinach
2 cups Feta Cheese
Salt
Pepper
