Mozzarella & Roasted Garlic Recipe

 

DIRECTIONS:

Boil potatoes until tender, drain and set aside.

Over medium heat Sauté spinach in olive oil until tender. 

Add sausage, onions and potatoes, cook 3 minutes on medium heat

Wisk eggs, salt, pepper and parmesan and add mixture to pan.

Cook 2-3 minutes lifting edges with spatula to allow egg to flow underneath

Cover and cook over medium low heat for 14-17 minutes

Garnish with diced tomatoes and parmesan.

INGREDIENTS:

12 oz sliced artichoke & mozzarella sausage

6 oz fresh spinach

2 cups small red potatoes quartered

8 eggs

1 cup diced white onion

2 tablespoons olive oil

¼ teaspoon salt

¼ teaspoon black pepper

¼ cup grated parmesan
